Basil Oil

Basil oil garnish, a small amount goes a long way.

About 6 basil leaves chopped

2 TBS olive oil

Mash the basil leaves in a mortar and pestle.

Add the oil.

Muddle some more.

Let it site, macerate for a few hours. Minimum of 2 hours, but longer is better.

Strain out the basil solids using a fine mesh strainer.

Use your new very basil fragrant oil wherever you like.
